Veg Fried Rice with Gobi Manchurian Gravy



What you need:
For Veg Fried Rice:

1 cup Basmati Rice [washed and soaked for 20 minutes]
1 onion
1 cup of finely chopped carrot, beans, peas
1/2 cup of cabbage
1/2 cup of spring onions
Crushed pepper
Salt to taste

For Manchurian
Cauliflower florets [blanched in hot water for 10 minutes]
Oil for deep frying

For the batter
2 tablespoon of cornflour
1 cup of Maida
Salt to taste
1 tablespoon of ginger garlic paste
1 tablespoon of soy sauce
1 teaspoon of chilli powder

For the Gravy
1 tablespoon of crushed garlic
1 onion
1 tablespoon of soy sauce
1 teaspoon of crushed pepper
1/2 cup of diced capsicum
2 tablespoon of tomato ketchup
1 teaspoon of chilli flake [spice can be adjusted]
1/2 cup of spring onion
2 tablespoon of cornflour + water [ thin consistency]
Salt to taste

How to Make it

Veg Fried Rice
  • Cook the rice and keep aside to cool.
  • Heat a little oil, add onion and cook till it turns transparent.
  • Add desired vegetables and sauté well.
  • Add cabbage and spring onions and toss well till everything is mixed well.
  • Add in the cooked rice and mix well. Make sure the grains are separate. Do not over mix as they tend to break.
Manchurian
  • Mix all the ingredients under ‘For the batter’. It should have a flowing consistency.
  • Dip the cauliflower florets and deep fry. Cook until they are golden brown.
For the Manchurian Gravy
  • Heat little oil, add in crushed garlic.
  • Add the onions and cook till it turns transparent.
  • Add in capsicum, pepper, sou sauce.
  • Add tomato ketchup, chilli flakes and salt.
  • Once the capsicum is half done, add in the spring onion and toss well.
  • Add in the cornflour mixture and water and adjust to a gravy consistency.
  • When it starts to boil, drop in the deep-fried cauliflower, and stir well. 
  • Garnish with spring onions.
