Kadabu - Sweet



What you need for Rice Flour dough

1 cup Rice flour

2 tablespoon Maida [All purpose flour]

1 1/2 cup Water


What you need for Gunpowder

1 cup - Bengal Gram [ slightly warmed and powdered fine]

1/2 cup - Dry Coconut [ powdered fine]

1 spoon - Khus Khus [ dry roasted and powdered fine]

1 cup - Jaggery [powdered fine]

1/2 teaspoon Elaichi Powder


What you need for Jaggery Syrup

1 cup - Jaggery

1 cup - Water

Few strands of Saffron

Pinch of Elaichi Powder


How to make Rice Flour Dough

  1. Boil water.
  2. Add in the Rice Flour and Maida. Lower the flame and cook for 4 - 5 minutes
  3. Mix/Knead the mixture well to form a dough. [The mixture will be extremely hot!!]
  4. Keep the dough covered. Take only the required quantity every time to roll chapathi.


How to make Jaggery Syrup

  1. Mix Water and Jaggery. 
  2. Let it boil in low flame [ if the flame is medium or high, the jaggery caramelizes or burns fast].
  3. Cook till a drop when dropped into a bowl of water hardens/forms a ball.
  4. Mix saffron and Elaichi Powder.


How to make Sweet Kadubu

  1. Roll the rice flour dough into small chapathi. The thinner the chapathis are, the better the filling tastes.
  2. Stuff Gunpowder inside the dough made out of rice flour chapathis
  3. Seal the sides well with slight water.
  4. Steam for 10 - 15 minutes.
  5. Drizzle Jaggery Syrup and relish hot sweet Kadubus.
