What you need
For Sponge Cake
1 1/2 cup Maida/All purpose flour
1 Cup Curd
3/4 cup Sugar [I have used Brown Sugar]
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
1/2 cup Cooking Oil [Any smell-less oil]
1 teaspoon Vanilla Essence
1/2 teaspoon cinnamon [optional]
For Custard
3 tablespoon of Custard Powder
150 ml Water
350 ml Milk
4 tablespoon sugar [I have used Brown Sugar]
For Base
1 cup plain Cornflakes
1 tablespoon honey
For Chocolate Syrup
1/4 cup of grated chocolate [I have used Belgium Chocolate]
2 tablespoon milk/cream
Honey Cream
1/2 cup whipped cream
1 tablespoon honey
3 tablespoon whipped cream
How to make
For Sponge Cake
- In another bowl, mix curd and sugar. Whisk well. Add Baking powder and Baking Powder to it. Rest the mixture for 5 minutes.
- To this add oil, Vanilla Essence.
- Mix the wet ingredients with Maida/All purpose flour and cinnamon. Fold in all the ingredients gently.
- Pour the batter to a well-greased baking tin.
- Preheat oven for 180C.
- Bake for 30 - 35 minutes or until top looks golden brown/toothpick comes out clean.
- Remove from the baking tin, and place it on a cooling rack to cool completely.
For Custard
- Take the custard powder, and whisk in water till no lumps are found.
- Boil milk with sugar on low flame.
- Pour in the custard mix, and stir continuously in low flame to avoid lumps/bottom getting brown.
- Let cool completely.
For Base
- Powder cornflakes coarsely by hand.
- Add in the honey.
- In a double boiler [heat water, place another smaller vessel inside and melt chocolate and milk together until they form a good mixture]
- Mix all together.
For Honey Cream
- Whip the cream well until it forms peaks.
- Add in the honey
How to Assemble
- Spread the base well and refrigerate for 20 minutes or until it becomes hard.
- Spread Honey Cream uniformly.
- Layer it with Custard.
- Top it up with a layer of Sponge Cake.
- Layer it with Custard.
- Top it up with a layer of Sponge Cake.
- Spread a layer of Whipped Cream to finish off the layering.
- Refrigerate it for a couple of hours before serving.
Note:
- You can add in fruits and berries like strawberries, blueberries, banana, pineapple, peach, etc
- You can add grated chocolate inbetween layers to add in a special touch.
- The layers can be of your choice of flavor and combinations.
