What you need
1 cup powdered Jaggery
1/2 cup oil
1 cup milk curdled [ add 1 tsp of lemon juice and let it stand for about 10 minutes]
1 1/2 cup Aata
1 teaspoon of Baking Powder
1/2 teaspoon of Baking Soda
1/3 cup milk
1 + 1 teaspoon Grated Ginger
3/4 cup of dry fruits and nuts [ I have used pecan, walnut, almonds, cranberries, raspberries]
1 teaspoon White Sesame Seeds
How to make it
- In a bowl, whisk Jaggery and oil well until they form a good mixture.
- Add in the curdled milk and mix well.
- Sieve Aata, baking powder, and baking soda in the liquid mix.
- Add milk and mix the batter well.
- Add 1 teaspoon of grated ginger.
- Add the desired dry fruits and nuts.
- Grease the baking pan.
- Pour in the batter and pat gently to form a uniform top.
- Sprinkle desired dry fruits and nuts, grated ginger, and white sesame seeds
- Preheat the oven to 180 C and bake for 25 minutes or until the toothpick comes out clean.
- Let it cool completely before removing it from the baking pan.
