What you need for Rice Flour dough
1 cup Rice flour
2 tablespoon Maida [All purpose flour]
1 1/2 cup Water
What you need for Spicy Stuffing
1 cup - Channa Daal [Soak for 2 - 3 hours, Ground Coarsely]
1 Onion [finely chopped]
1/2 cup Dill leaves [finely chopped]
3 - 4 Green Chilli [Spice can be adjusted]
A fist full of Coriander [finely chopped]
2 - 3 springs of curry leaves [finely chopped]
1 inch Ginger [grated]
1/2 cup fresh grated Coconut
How to make Rice Flour Dough
- Boil water.
- Add in the Rice Flour and Maida. Lower the flame and cook for 4 - 5 minutes
- Mix/Knead the mixture well to form a dough. [The mixture will be extremely hot!!]
- Keep the dough covered. Take only the required quantity every time to roll chapathi.
How to make Spicy Stuffing
- Mix all the ingredients under ‘Spicy Stuffing’
- Add salt to taste at the end [as it tends to leave water when mixed with onion]
- Add water accordingly. When pressed tight, should hold shape to form a ball.
How to make Spicy Kadubu
- Roll the rice flour dough into small chapathi. The thinner the chapathis are, the better the filling tastes.
- Stuff the spicy stuffing inside the dough made out of rice flour chapathis
- Seal the sides well with slight water.
- Steam for 10 - 15 minutes.
