What you need:
For the filling:
1 potato [boiled and mashed/grated]
1/2 cup grated paneer
1/2 teaspoon chilli powder [can be adjusted to taste]
1/2 teaspoon garam masala powder
1/2 teaspoon jeera powder
Pinch of salt [can be adjusted to taste]
For the dough
1 cup wheat flour
1 teaspoon of oil
Pinch of salt
Water to knead to dough consistency
How to Make it:
- Mix all the ingredients under ‘For the dough’ to dough consistency and keep aside for 15 minutes.
- Mix all the ingredients under ‘For the filling’ to form the filling
- Take a small portion from the dough and roll it to form a small chapati.
- Add a small ball of the filling in the middle and seal from all the sides to form a ball.
- Sprinkle a little bit of dry wheat flour and roll it to make thin paratha.
- Put it on a hot tawa. Drizzle oil/ghee [my choice] and cook well on both sides.
- Add a dollop of butter to enhance the taste.
Other Combinations that I have tried are:
- Potato [boiled and mashed/grated]
- Potato [boiled and mashed/grated] + Cauliflower [blanched and mashed/grated]
- Potato [boiled and mashed/grated] + Onions [sauté]
- Potato [boiled and mashed/grated] + Paneer [Grated]
- Potato [boiled and mashed/grated] + Sweetcorn [blanched and mashed]
- Paneer [Grated] + Black pepper
- Potato [boiled and mashed/grated] + Paneer [Grated] + Sweetcorn [blanched and mashed]
- Potato [boiled and mashed/grated] + Paneer [Grated] + Sweetcorn [blanched and mashed] + Capsicum [ finely chopped]
You can make your own combinations. Also, try adding greens like Methi or palak for a different flavor.
